POTATOES, FOILED AGAIN 1 potato ½ medium onion 1 tbsp butter salt and pepper to taste Each recipe is one serving. Pare the potato(es), then cut in four crosswise slices. Slice the onions. Butter each potato slice and then reassemble on a large square of foil, with online slices between each potato slice. Sprinkle generously with salt and a dash of pepper. Secure the reassembled potato with toothpicks or a skewer. Wrap tightly in double thickness of aluminum foil. Bake on a baking sheet at 375° for about one hour, until potatoes are done.
