PRESSURE COOKER POTATO SALAD

         6 slices bacon, diced            1 tsp mustard
         4 medium potatoes, diced         ¼ tsp pepper
         1 onion, thinly sliced           ⅓ cup vinegar
         2 tbsp sugar                     2 tbsp water
         2 tsp salt                       2 tbsp parsley, minced

Brown the bacon in the pressure cooker and pour off the fat. Add the potatoes and onion.

Mix the sugar, salt, pepper, mustard, vinegar, water, and parsley. Add to the cooker. Cook 5 minutes at the normal cooking pressure for your cooker. Remove from heat and cool cooker quickly according to your manual.
