PEANUT BUTTER OATMEAL FUDGE BARS 1 cup softened butter ¾ cup cocktail peanuts ⅓ cup peanut butter 2 cups sugar 1-½ cups oat flour 1 cup water 1 tsp vanilla In a stand mixer combine all ingredients except sugar and water; blend well. In a 1-½ quart saucepan, bring the water and sugar to a boil, stirring, and then bring to 250°. Pour syrup slowly into the mix while stirring. Continue stirring a few minutes until thickened, well-blended, and fudgy. Spread in a buttered 7x11-inch pan and cool. Cut into 32 (8x4) bars. Adapted from “Pillsbury’s Bake Off Cookie Book” (1967).
