PEANUT BUTTER HONEY SQUARES 1 packet unflavored gelatin 1-⅓ cup cookie crumbs 2 tbsp sugar ¼ cup sugar 1-½ cup water ¼ cup softened butter 4 oz honey 1 tbsp grated orange zest ½ cup peanut butter 1 cup whipping cream Whisk the gelatin and sugar together. Add honey, peanut butter, and dry ingredients to water in a medium saucepan and mix. Bring to a boil stirring continuously. Remove from heat and chill in the refrigerator until slightly thickened, about 60 to 90 minutes. Mix crumbs, sugar, zest, and butter well and press ⅔ of this mix into a buttered 8x8 dish. Whip cream well. Fold into cooled gelatin mixture. Pour into dish. Top with remaining crumb mix. Chill at least 4 hours or overnight. Adapted from the “Joys of Jell-O” (1963).
