KEY LIME PIE

       1 packet unflavored gelatin       ½ cup lime juice
       1 cup sugar                       1 tsp grated lime peel
       ¼ tsp salt                        green food coloring
       4 eggs, separated                 1 cup heavy cream
       ¼ cup water                       1 baked 9-inch pie shell

Mix the gelatin, ½ cup of sugar, and salt in a saucepan. Beat the egg yolks, water, and lime juice together and stir into the gelatin mix. Cook over medium heat, stirring constantly, until it comes to a boil. Remove from heat.

Stir in the lime peel. Add enough food coloring to make it pale green. Chill, stirring occasionally, until thick but not set.

Whip the cream, then beat the egg whites until soft peaks form; add remaining ½ cup sugar gradually, beating until stiff peaks form. Fold the gelatin mix into the egg whites, and then fold in the whipped cream. Pour into the pie shell and chill until firm.
