CRANBERRY SQUARES

    1 packet unflavored gelatin           1 cup whipping cream
    ¾ cup sugar                           1-⅓ cup cookie crumbs
    1-½ cup water                         ¼ cup sugar
    juice and zest of one small lemon     ¼ cup softened butter
    2 cups fresh or frozen cranberries    1 tbsp grated orange zest

Whisk the gelatin and sugar together. Boil cranberries in ½ cup water with the lemon juice and zest until the cranberry skins burst. Bring remaining 1 cup water to a boil and whisk the gelatin sugar mix into the boiling water. Add this to the cranberries and mix well. Chill in the refrigerator until slightly thickened, about 60 to 90 minutes.

Mix crumbs, sugar, orange zest, and butter well and press ⅔ of this mix into a buttered 8x8 dish.

Whip cream well. Fold into chilled cranberries. Pour into dish. Top with remaining crumb mix. Chill at least 4 hours or overnight.
