BANANA BUTTER FROSTING ½ tsp lemon juice ½ cup mashed ripe banana ¼ cup butter 3-½ cup sifted powdered sugar Mix the lemon juice into the mashed banana. Beat the butter in a mixing bowl until creamy. Add small amounts of sugar and mashed banana alternately, beating until the frosting is light and fluffy. It’ll take one or two bananas to get the right amount. This makes enough frosting for the top of two 8-inch round cakes, such as Banana Layer Cake, or the top and sides of a single layer cake. Sprinkle with nuts if desired.
