Tahini shortbread

Jerry Stratton, June 26, 1997

This shortbread adds tahini--sesame butter--to the dough for a lightly exotic nutty flavor, and chocolate on top to hide the fact that you bought the tahini in a health-food store.

Servings: 10
Preparation Time: 1 hour

Ingredients

  • 1/4 cup butter
  • 1 cup tahini
  • 1 cup brown sugar
  • 1/4 cup vanilla syrup
  • 1/2 tsp salt
  • 2 cups flour
  • 25-50 walnut pieces
  • 25-50 chocolate chips

Steps

  1. Cream the butter with the tahini.
  2. Cream the sugar and syrup with the tahini mix.
  3. Mix the salt in.
  4. Add flour until mix is firm, cookie-dough consistency.
  5. Press into a buttered 9-inch square baking dish
  6. Score into pieces, cutting halfway through.
  7. Place walnut pieces into dough.
  8. Bake at 325 degrees, 30-45 minutes: until just browned.
  9. Spread chocolate chips onto top when done. After a few minutes, either press the melted chips or spread them, as you prefer.

You can get tahini at most any health food store, or at Trader Joe’s. You can get vanilla syrup (and other flavors) at Cost Plus and many supermarkets.
